In your search for the tastiest chocolate chip cookie, I thought I would share one of my favorite healthier cookie recipes. We enjoy an occasional after dinner treat, so when I discovered this version I was excited. These are so incredibly easy to make and our 13 year old made them at home for his life skills class. Delicious warm but you can also freeze them and eat them anytime. Let me know how you like them! Although they are "healthier" it still doesn't mean you can eat the whole batch, so watch yourself. ;-)
1/2 cup Grass fed or organic unsalted butter or ghee
1/2 cup Coconut sugar or raw sugar
2 TBSP Raw honey
2 large organic Eggs, room temp.
4 TSP Vanilla
3 Cups Almond Flour or gluten free organic White Flour (optional: plus 2-4 TBSP Coconut Flour)
1 TSP Baking Soda
1 TSP Pink Salt or Sea Salt
1/2 Cup Dark Chocolate Chips or Bar cut up (optional: plus 1/2 cup for double chocolate)
Preheat oven to the 350 degrees. Mix the butter, sugar, honey, eggs and vanilla in a bowl until smooth. In another bowl, add the flour(s), baking soda and pink salt. Mix all together and toss in the chocolate chips by hand. Roll onto cookie sheet and cook for 8-10 minutes. Work with the ingredients to find your own fave chocolate chip recipe. Enjoy!
